Roasted Sweet Potato & Goat Cheese Salad

Ingredients

  • 2 medium sweet potatoes

  • 4 ounces goat cheese

  • ½ cup chopped walnuts

  • 1 tbsp balsamic vinegar

  • a bunch of chopped parsley

  • ½ cup pomegranate seeds

  • 4 tbsp extra virgin olive oil

  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Toss the sweet potato slices with 2 tbsp olive oil, salt, and pepper. Spread evenly on the sheet and roast for 25–30 minutes, until golden and tender, flipping halfway.

  3. In a large bowl, mix roasted sweet potatoes, crumbled goat cheese, walnuts, and pomegranate seeds.

  4. In a small bowl, whisk together 2 tbsp olive oil, balsamic vinegar, salt, and pepper. Drizzle over the salad.

  5. Garnish with fresh parsley and serve warm or at room temperature.
