Roasted Sweet Potato & Goat Cheese Salad

This simple sweet potato salad is a celebration of fall flavors and nutrient-rich ingredients. Sweet potatoes are loaded with fiber and beta-carotene, which support gut and eye health. Walnuts provide heart-healthy omega-3 fatty acids that help reduce inflammation and promote cardiovascular health. Pomegranate seeds add a burst of antioxidants, protecting cells from oxidative stress and giving your skin a healthy glow. Fresh parsley not only brightens the dish but also aids digestion, supports liver function, and helps your body naturally detoxify. Together, these ingredients create a colorful, flavorful salad that’s as nourishing as it is delicious.
