Roasted Sweet Potato & Goat Cheese Salad
This simple sweet potato salad is a celebration of fall flavors and nutrient-rich ingredients. Sweet potatoes are loaded with fiber and beta-carotene, which support gut and eye health. Ingredients:
2 medium sweet potatoes
4 ounces goat cheese
½ cup chopped walnuts
1 tbsp balsamic vinegar
a bunch of chopped parsley
½ cup pomegranate seeds
4 tbsp extra virgin olive oil
Salt & pepper to taste
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss the sweet potato slices with 2 tbsp olive oil, salt, and pepper. Spread evenly on the sheet and roast for 25–30 minutes, until golden and tender, flipping halfway.
In a large bowl, mix roasted sweet potatoes, crumbled goat cheese, walnuts, and pomegranate seeds.
In a small bowl, whisk together 2 tbsp olive oil, balsamic vinegar, salt, and pepper. Drizzle over the salad.
Garnish with fresh parsley and serve warm or at room temperature.
